Foodie Friday: Mini strawberry pizzas

Mini strawberry pizzas
Adapted from Shannon's recipe
 
2 packages of pre-made sugar cookies (I like Pepperidge Farm because they are nice and sturdy)
1 package fresh strawberries, sliced into tiny pieces
1/2 tub or bag of strawberry glaze (I like Marzetti sugar-free glaze)
1/2 block of cream cheese, very soft
1 3/4 C of Cool Whip, thawed
1/4 cup powdered sugar (keep adding to it until it is as sweet as you like)

  • While you slice the strawberries (I quarter them, then slice down the middle), let the cream cheese soften. If it is not soft enough, it will make the spread lumpy!
  • Mix the strawberries with the glaze.
  • Use a mixer to blend the cream cheese, Cool Whip, and powdered sugar. Keep adding sugar to adjust the sweetness).
  • I prepare each pizza one at a time so that the spread doesn't melt off the cookies. Spread the cream cheese mixture onto the cookie, then top with the strawberries. Chill right away.
These hold up in the fridge for at least one night. After that, ours were gone because we ate them! They are also very yummy with the store brand bakery sugar cookies. I would not suggest the slice and bake kind, as I broke about 7 of them trying to spread the cream onto them. Take these to your next party!
