Mini strawberry pizzas
Adapted from Shannon's recipe
1 package fresh strawberries, sliced into tiny pieces
1/2 tub or bag of strawberry glaze (I like Marzetti sugar-free glaze)
1/2 block of cream cheese, very soft
1 3/4 C of Cool Whip, thawed
1/4 cup powdered sugar (keep adding to it until it is as sweet as you like)
- While you slice the strawberries (I quarter them, then slice down the middle), let the cream cheese soften. If it is not soft enough, it will make the spread lumpy!
- Mix the strawberries with the glaze.
- Use a mixer to blend the cream cheese, Cool Whip, and powdered sugar. Keep adding sugar to adjust the sweetness).
- I prepare each pizza one at a time so that the spread doesn't melt off the cookies. Spread the cream cheese mixture onto the cookie, then top with the strawberries. Chill right away.
